At Third Wave Chocolate, we use ONLY two ingredients—pure, unadulterated cacao and organic sugar. You’ll never find additives, preservatives, or stabilizers in our chocolate.

Aroma is intensely floral with a mix of tang. Bright flavor of red and orange fruits. Rasperry and strawberry. Light sweetness on the back, like a candied ginger. Almost no astringency or bitterness. Minimal, if any, nut or earthy flavor.
The Pangoa cacao beans come from the mid-southern region of the Peruvian jungle. Pangoa is a small area within the VRAE region of Peru.The native communities that farm the Pangoa cacao are Nomatsigenga and Sonomoro. It is believed that the name Pangoa is derived from the word pangotsi in native dialect of Asháninka. Pangotsi means home/house, in reference to the hospitality of the old natives of this area. Over the last few years (15+), the government has invested a lot of time and incentives for the farmers to plant coffee and cocoa crops.
